Ingredients
- 150g oats - use gluten free if required
- ½ tsp baking powder - use gluten free if required
- 1 ripe banana (about 100g, peeled), mashed
- 1 large egg
- 100ml almond milk
- 1 tsp vanilla extract
- 1½ tsp coconut oil
- about 160g mixed berries
- 2 tsp desiccated coconut
- 2 tbsp maple syrup
Step by step
- Preheat the oven to 120°C, fan 100°C, gas ½. In a processor or high-speed blender, blitz the oats to a fine crumb.
- Add a pinch of salt, the baking powder, banana, egg, almond milk and vanilla and process to a smooth batter.
- Add a little coconut oil to a non-stick frying pan and place over a medium heat. Add a spoonful of the mixture and quickly use the back of a spoonto spread to a thick pancake, 8-9cmin diameter; you should be able tocook 2 or 3 pancakes at a time. Cookfor 2 minutes or until a few bubbles appear and the edges begin to set, then flip carefully and cook for 1-2 minutes more on the other side.
- Repeat with the rest of the mixture, adding more oil as necessary, to make 6 pancakes in total. As they are ready, transfer the cooked pancakes to a plate and keep warm in the low oven while you cook the rest.
- Stack the pancakes up with the mixed berries and desiccated coconut and top with a drizzle of maple syrup.
