Ingredients
- 200g frozen French fries*
- 5 medium eggs
- 80g mature cheddar*, grated
- 1 tbsp chopped chives, plus extra to serve
- 1 tbsp vegetable oil
- vinaigrette-dressed salad leaves*, to serve
Step by step
- Preheat the oven to 240°C, fan 220°C, gas 9 or your air fryer to 200°C. Bake or air-fry the frozen chips according to pack instructions. Once golden and crispy, season with a pinch of salt and set aside to cool for a few minutes. Meanwhile, preheat the grill to medium.
- In a measuring jug or bowl, whisk the eggs, then whisk in half the grated cheese and the chives. Season with salt and black pepper. Heat the oil in an ovenproof frying pan (about 19cm base diameter) over a medium heat. Reduce the heat slightly, then pour in the egg mixture and nestle in the chips – some of the chips will be exposed. Cook until the eggs are almost set but with some runny egg still on the surface (about 8-10 minutes).

Scatter the remaining cheese on top, then place under the grill for 3-4 minutes until set and golden brown. Scatter over extra chopped chives, then cut into quarters and serve with the dressed salad leaves.
*Ensure your fries and vinaigrette are gluten- free, if required. Ensure your cheddar is vegetarian, if required.
