Ingredients

  • 2 x Stamford Street Co. British breaded chicken steaks
  • 20g soft salted butter
  • 1 tbsp finely chopped flat-leaf parsley
  • 2 garlic cloves, crushed
  • 1 tsp olive oil
  • 1 x 300g pack cauliflower rice (or fresh cauliflower, blitzed finely)
  • 40g lighter soft cheese
  • 3 tbsp semi-skimmed milk
  • 200g fine green beans

Step by step

  1. Preheat the oven to 200°C, fan 180°C, gas 6. Add the chicken steaks to a baking tray and bake for 25 minutes until cooked through and crisp.
  2. Meanwhile, combine the butter, parsley and half the crushed garlic. Shape into two pats and put in the fridge to chill.
  3. Heat the oil in a sauté pan over a medium heat. Add the remaining garlic and sauté until fragrant but not coloured. Add the cauliflower rice with a splash of water, sauté for 1 minute then cover and cook for 5 minutes over a low heat. Transfer to a food processor with the soft cheese, milk and a large pinch of salt. Purée until smooth then season to taste.
  4. Cook the green beans to your liking. Divide the cauliflower mash between two plates then add the chicken steaks and top with a pat of butter to melt over. Serve with the green beans on the side.
