A smash burger is flattened or smashed to a thin patty while it cooks quickly in a very hot pan, creating a crisp outer crust and a juicy interior

Ingredients

  • 1 sweet onion
  • 1 x 500g pack 20% fat beef mince
  • 2 brioche buns
  • burger sauce
  • 4 slices chilli cheddar, or cheese of your choice
Optional extras
  • shredded lettuce
  • gherkins
  • sliced tomatoes

Step by step

  1. Slice the onion very finely and set aside. Divide the beef mince into 4 portions and form them into compact balls. Heat a dry frying pan (or two pans to cook all the burgers at once) and once very hot add 2 meat balls. Pile a quarter of the onions on top of each ball in a mound, and then using a flat spatula and a potato masher placed directly on top, press down on the balls to flatten them. Season and cook for 2-3 minutes on high heat until a thick dark crust has formed on the base of the patty.
  2. Meanwhile, toast the burger buns and spread the bases with burger sauce.
  3. Flip the burgers, season, then top each with a slice of cheese. Cook for another 2-3 minutes then stack the patties one on top of the other and transfer to the base of the first bun. Top with more burger sauce and any other toppings of your choice like pickles, lettuce or tomato, and finish with the brioche burger bun top. Repeat the process for the remaining 2 meatballs.
