Reader recipe: smoky chickpea and chorizo soup

She says: 'I wanted to recreate the sunny flavours of my favourite holiday dish, Chicken Basque, in a warming comforting soup. I cook with big, bold flavours, and love the kick of hot paprika, the vibrant colour, and the tang of orange – it’s the perfect soup for a chilly day.’

Ingredients

  • 150g chorizo ring, casing removed
  • 1 tsp olive oil
  • 1 red onion, diced
  • 1 orange, yellow or red pepper, diced
  • 2 fat garlic cloves, crushed
  • 1 tsp hot smoked paprika
  • 1 x 400g tin cherry tomatoes
  • 1 x 400g tin chickpeas, rinsed and drained
  • 1 tsp dried oregano
  • juice of ½ orange
  • small handful parsley, finely chopped

Store in the fridge for up to 3 days, or freeze. Gently reheat to serve
  1. Halve the chorizo lengthways then cut into half moons. Heat the olive oil in a large saucepan, add the chorizo and fry for 4 minutes until it releases some fat. Add the onion, pepper and a pinch of salt; cook on a medium heat for 8-10 minutes.
  2. Add the garlic and paprika and fry for a further minute, stirring all the time, until fragrant.
  3. Add the tinned cherry tomatoes, chickpeas and oregano. Pour in 1½ tins of water and bring to the boil. Reduce the heat and simmer for 10 minutes. 
  4. Allow to cool for a few minutes then scoop out about one-third of the soup and blend until smooth. Pour back into the pan, add the orange juice, stir and gently reheat, seasoning to taste.
  5. Top with a scattering of fresh parsley and a crack of black pepper, then serve with warm crusty bread, if you like. *Check your chorizo is gluten- and dairy-free if required.
