Ingredients

  • 2 tbsp pure sesame oil
  • 4cm root ginger, cut into matchsticks
  • 3 garlic cloves, sliced
  • 1 red chilli, finely chopped
  • 450g rump steak, trimmed and thickly sliced
  • 2 bunches of spring onions, cut into 5cm lengths
  • 100g sugar snaps
  • 2 tbsp kicap manis (Indonesian sweet soy sauce)
  • 1 tbsp dark soy sauce
  • juice of 1 lime
  • 10g toasted sesame seeds
  • cooked white rice, to serve

Kicap (or kecap) manis is sweeter and thicker than regular soy sauce. It’s often used as a dipping sauce, in marinades, or to add flavour to soups and stews, as well as stir-fries. Once opened, it keeps for months in the fridge.
  1. Heat the sesame oil in a large frying pan or wok over a medium heat and gently stir-fry the ginger, garlic and chilli for 2-3 minutes. Increase the heat, add the steak strips and cook for 1-2 minutes until just seared and then add the spring onions and sugar snaps. Continue to stir-fry for 2-3 minutes.
  2. Whisk together the kicap manis, soy sauce and lime juice and add to the pan. Continue to cook, tossing everything in the sauce for 2-3 minutes. Scatter over the toasted sesame seeds and serve with rice.
