Ingredients
- 800g bunched carrots, trimmed
- 2 tbsp olive oil
- 2 tbsp maple syrup
- zest of 1 orange, plus the juice of ½
- 2 tsp wine vinegar
- 75g walnut pieces
- ½ x 30g pack parsley, chopped
Step by step
- Preheat the oven to 190°C, fan 170°C, gas 5. Toss the carrots in a roasting tin with the oil and some salt and pepper. Roast for 25 minutes.
- Drizzle the maple syrup, orange juice and vinegar over the carrots and toss to coat. Roast for another 5 minutes.
- Stir the zest through the carrots and put the walnuts into a separate roasting tin. Roast both for 5 minutes.
- Stir most of the walnuts and the parsley through the carrots, then transfer to a serving plate. Scatter over the remaining walnuts and parsley to serve.
