Ingredients
- 1kg Jersey Royals
- 2 tbsp vegetable oil
- 30g butter
- 50g honey
- ½-1 tsp chilli flakes, depending on how much heat you like
- zest of 1 lime
Step by step
- Preheat the oven to 200°C, fan 180°C, gas 6. Put the Jersey Royals in a large pan of cold water and bring to the boil. Simmer for 12 minutes, then drain and place the potatoes in a roasting tray.
- Lightly smash with a potato masher, so they are broken but not completely crushed, then drizzle the oil over, season well and toss gently. Roast for 20 minutes, until golden and crisp.
- Put the butter, honey and chilli flakes in a small pan and bring to a simmer. Pour over the potatoes and then return to the oven for a further 15-20 minutes, until very crisp. Sprinkle over the lime zest to serve.
