Ingredients
- 170g mixed nuts (we used pecans and blanched almonds)
- 250g pitted Medjool dates
- 70g cacao powder
- 2 tbsp maple syrup
- 50g desiccated coconut
Step by step
Get ahead
The brownie bites keep for up to 1 week in the fridge, or can be frozen.
- Heat a dry frying pan and lightly toast the nuts for a few minutes. Leave to cool.
- Add the cooled toasted nuts to a food processor and blend for 2 minutes until you have a thick paste. Add the pitted dates and blend again. Lastly, add the cacao and maple syrup and process to a sticky mixture.
- Take small handfuls of the mixture and roll into 15 balls (about 30g each).
- Roll the energy balls in the desiccated coconut, then place on a lined baking tray. Chill for at least 1 hour before serving.
