Ingredients
- 1 Knorr Vegetable Stock Pot
- 1 tbsp olive oil
- 1 onion, chopped
- 1 garlic clove, crushed
- 1 stick lemongrass, bashed
- 1 medium sweet potato, peeled and chopped into small chunks
- 2 lime leaves
- 1 x 400ml tin coconut milk
- lime wedges, sliced chilli and coriander to serve
Step by step
- Heat the oil in a saucepan, then gently cook the onion, garlic, chilli and lemongrass for 5 minutes until soft and fragrant.
- Mix in the sweet potato, lime leaves, the Knorr Vegetable Stock Pot, 450ml water and the coconut milk (see ‘Tip’, below), bring to the boil and cover.
- Simmer for 10 minutes or until the potatoes are soft. Discard the lemongrass and lime leaves. Blend the soup until smooth.

Finish with a squeeze of lime and garnish with thinly sliced red chilli and coriander.TipReserve a little of the thick coconut cream from the top of the tin of coconut milk to swirl on top of the soup to level up your meal.
