Ingredients
- 100g lemon curd
- juice and grated zest of ½ lemon
- 4 oaty biscuits
- 8 mini meringues
- 1 x 500ml (450g) tub vanilla ice cream
- 2 tbsp limoncello
Step by step
- Combine the lemon curd and lemon juice in a bowl. Break up the oaty biscuits and 4 of the meringues into rough pieces.
- Place half the biscuit and meringue pieces into the bottom of 4 tall glasses and add a scoop of vanilla ice cream to each one. Spoon in some of the lemon curd sauce, then repeat the layers.
- Drizzle ½ tablespoon limoncello into each glass, scatter with lemon zest and top with a meringue. Serve immediately.
