Ingredients
For the sorbet
- 275g caster sugar (organic if possible)
- 175ml lemon juice, plus the zest of 2 lemons (organic if possible)
For the Sgroppino
- 2 scoops of lemon sorbet
- 30ml vodka
- 75ml Terra Organica Prosecco
- 2 twists of lemon peel
- a few sprigs of mint
Step by step
- To make the sorbet, put the sugar in a pan with 275ml of water. Add the lemon zest and heat gently until the sugar has dissolved. Bring to a simmer and cook gently for 4-5 minutes. Remove from the heat, leave to cool and then stir in the lemon juice and leave to cool completely. Transfer to a deep plastic container and freeze for 2 hours.
- Remove from the freezer and gently whisk to break up the ice crystals. Return to the freezer for another hour. Repeat the whisking process every hour for another 4 hours, then leave to set completely.
- To make the cocktail, scoop a small ball of sorbet into each coupe glass. Add the vodka then top up with Prosecco. Garnish with the lemon twist and mint.
