Eat this in its melted state, and dip bread in, or if you prefer, pour the buttered shrimps into ramekins and put them in the fridge to set for a few hours, then serve on toast

Ingredients
- 150g salted butter
- 1 garlic clove, bashed
- 2 sprigs of thyme, bruised
- a pinch of cayenne pepper
- 1 blade of mace or a pinch of ground mace
- sea salt flakes
- 3 x 70g packs brown shrimp, or see Tip
- 1 lemon, cut into wedges
- crusty bread or toast, to serve
Step by step
- Melt the butter in a saucepan. When fully melted, skim off the milk solids and discard so you end up with clarified butter left in the pan.

Add the garlic, thyme, cayenne, mace and some black pepper and simmer gently for 2 minutes. Add a pinch of sea salt and stir in the shrimp to warm through for a minute. Serve with the lemon wedges to squeeze over and lots of bread or toast for dipping into the butter.TipIf you can’t get hold of brown shrimp, small Atlantic prawns work well, but eat them straight away rather than leaving to set in ramekins.
