Ingredients

  • 100g blueberries
  • 100g granulated sugar
  • 150ml water
  • juice of 1 lemon
  • 30g pack of mint
  • crushed ice
  • 100ml bourbon
To garnish
  • slices of lemon
  • mint sprigs

Step by step

  1. For the syrup, put the blueberries, sugar and water in a saucepan. Bring to the boil, then reduce the heat and bubble for 10 minutes. Once the syrup coats the back of a spoon and is a deep purple colour, strain into a bowl. Stir in the lemon juice and set aside to cool.
  2. Tear the leaves from the 1/4 of the pack of mint and put into the bottom of 2 glass tumblers. Divide 50ml of the blueberry syrup between the glasses and gently muddle together. Top up with crushed ice and bourbon and gently stir. Garnish with slices of lemon and sprigs of mint.
