Ingredients

  • 120ml strawberry gin (such as Beefeater)
  • 2 tbsp strawberry and thyme syrup (see below)
  • 400ml Champagne or crémant, well chilled
  • 4 strawberries, quartered
  • a few thyme sprigs
For the strawberry and thyme syrup (makes 350ml)
  • 250g strawberries, halved
  • 150g caster sugar
  • 5 sprigs of fresh thyme

Step by step

  1. For the syrup, put all the ingredients in a saucepan with 300ml water. Heat gently, stirring until the sugar has dissolved, then bring to a simmer and simmer for 15 minutes, until the strawberries have completely broken down. Pass through a sieve and leave to cool.
  2. For the cocktail, fill a shaker with ice and add the gin and 2 tablespoons of syrup. Shake well and then strain into four flutes. Top up with fizz and garnish with the quartered strawberries and thyme sprigs.
