Ingredients

For the Darjeeling gin
  • 350ml London Gin
  • 2 Darjeeling tea bags
For two cocktails
  • 30ml elderflower cordial (we used Bottlegreen)
  • juice of 1 lemon, plus twists of peel
  • 200ml chilled prosecco

Step by step

  1. To make the Darjeeling gin, pour the London gin into a preserving jar and add the teabags. Leave to infuse for 24-48 hours, then remove the teabags.
  2. To make the cocktail for 2, put 60ml of the Darjeeling gin in an ice-filled cocktail shaker with the elderflower cordial and lemon juice. Shake well until chilled then strain into two coupes or champagne flutes. Top up with prosecco, add a twist of lemon peel and serve immediately.
