- 160g chopped strawberries
- 80ml water
- 80g caster sugar
- 50ml Pimm’s
- 30ml lemon juice
- 10ml vermouth bianco
- 1 egg white (or 2 tbsp aquafaba)
For the garnish
- half a strawberry
- a twist of lemon peel
Step by step
- Put the chopped strawberries in a small pan with 80ml water and the caster sugar; bring to the boil and simmer for 6 minutes until frothy and pink. Strain, cool and chill the strawberry syrup.
- Fill a cocktail shaker with ice and add 30ml of the strawberry syrup, Pimm’s, lemon juice, vermouth bianco and 1 egg white (or 2 tbsp aquafaba). Shake vigorously for 1 minute then strain into a gin balloon or wine glass.
- Repeat to make the remaining cocktails. Garnish with half a strawberry and a twist of lemon peel and serve.
