Pimm's clover club

This mash-up featuring two of our favourite summer tipples will be a big hit at your garden gatherings this year

Ingredients

  • 160g chopped strawberries
  • 80ml water
  • 80g caster sugar
  • 50ml Pimm’s
  • 30ml lemon juice
  • 10ml vermouth bianco
  • 1 egg white (or 2 tbsp aquafaba)
For the garnish
  • half a strawberry
  • a twist of lemon peel

Step by step

  1. Put the chopped strawberries in a small pan with 80ml water and the caster sugar; bring to the boil and simmer for 6 minutes until frothy and pink. Strain, cool and chill the strawberry syrup. 
  2. Fill a cocktail shaker with ice and add 30ml of the strawberry syrup, Pimm’s, lemon juice, vermouth bianco and 1 egg white (or 2 tbsp aquafaba). Shake vigorously for 1 minute then strain into a gin balloon or wine glass. 
  3. Repeat to make the remaining cocktails. Garnish with half a strawberry and a twist of lemon peel and serve.
